the Parma people pride themselves on their food - make sure that you book your tour at least a week in advance - its a totally ring every company job to try and find something last minute or on an off day if you dont book ahead.
The tours are expensive generally but the personalised service that is offered is really good - I used Food and Walk Tours and they were fantastic! try them for sure! the city sights are about 1 days worth of sight seeing but note that sundays have restricted hours and mondays most things are closed. Parma is totally under-rated in the non-Italian tourist market! Go there... you will love it!
I was only in the city of Parma one evening. We walked around the very beautiful city and ate a a nice restaurant i Garibaldi Sqare.
Some areas were a bit rough but overall, nice.
