Rent the e-bikes. They are a great way to get around all the different pagodas. Only thing is to be careful on the sandy paths as they tend to slide around in the soft sand a lot.
If you want to understand about the Pagoda ad history, you can stay more than 1 day. If not, just a day for sightseeing is enough.

there are 3towns in a small area offering different localities. All are near some of the temples. old Pagan has more expensive hotels -but little else close by.
You have to go temple hopping and explore all the pagodas and stupas possible. get to know a bit of their stories and enjoy both the sunset and sunrise; those are the gems.
Sunrise and Sunset are MUST-have in the sightseeing list. you can join day tour or hire e-bike in Nyeung-U, there are many shops providing the service.

Bagan an old seat of power for the monarchy were a series of leaders built many many many temples of varying shapes and sizes there are about 10 major sights, with many visited at sunset and sun rise( take a torch to all visits whether day or night to see the ceilings and in the stairs to the upper terraces )the area cannot be explained it has to be seen to be believed.

There are three parts to Bagan, Old, New and Nyuang-U where most of the cheaper hotels are. Did not spend much time in the Old and New towns so can only speak for Nyuang-U.
We planned for 3 days here, which would have been perfect had we not got food poisoning! I would recommend around 4 days, so you can watch sunsets and sunrises, and do loads of e-biking around to the temples! Buy things at the temples, as that is where the best bartering deals are found.
